So far, so good
The diet change has been going pretty well. We have gotten rid of most of the offending products, aside from my Cheerios and oatmeal, which Jess doesn't care for any how. We now buy a certain brand of soy sauce, Tamari. We have gotten rid off our cross contaminated foods, like previously opened jams. We have revamped our food storage with more quinoa and tapioca flour, instead of pastas and wheat flour. I have picked up a number of books from the library about gluten free life and CD. I have bought two, to start out with. "Celiac's Disease, the First Year", and "The Gluten Free Gourmet".
So far, we have played it safe with the menus. We stick with grilled meats, fresh veggies and fruit, and sometimes rice or potatoes. We have tried a few brands of gluten free products for snacks though. We like kinnikinnik's fudge sandwich cookies, and crunchmaster rice crackers.
Fruity pebbles are gluten free, as are a few flavors of Chex. Thai Kitchen's products are gluten free, but we haven't tried them yet. We did buy some kinnikinnik cinnamon donuts yesterday, because it is national donut day. They were good, especially since they were on sale, (3.50 for a box of 6). The food adventures are going well. We went out for pizza on memorial day, at a restaurant in Park City. The pizza had a special gluten free set up, since the owner is gluten intolerant, and the husband of the manager has CD. It was a good first experience, and we will probably go back.
We have finally gotten up the nerve to do our own baking. There is a lemon pound cake fresh from the oven cooling at the moment. I hope to do almost all of my own baking (no mixes), but I haven't quite gotten up enough courage for that yet. Someday.
Some concerns we have are eating at friend's and family's house. We don't want to be a hassle, but we also have to be particular about what he eats.
We are joining a gluten intolerance support group, which had meetings every month just down the hill from us. A few doctors, and some of the literature I have picked up, have recommended this. It is going to be a bit outside our comfort zone (we don't really like to be around large groups, especially ones we aren't related to).
Well, the cake is cool enough to dig in to. Here we go!
